Lemon, Thyme + Parsley Opah

Opah, otherwise known as moonfish, offers a rich creamy taste and firm texture. It is the only currently known warm-blooded fish. Nutritionally, it provides an excellent source of protein and healthy fats.

Lemon, thyme, and parsley form an aromatic combination that pairs especially well with seafood. Citrus fruits are currently in their seasonal prime, and the zest, or thinly peeled skin, delivers excellent flavor without the acidity of the juice. Lemon zest is rich in antioxidants such as Vitamin C and D-limonene, which provide multiple substantial health benefits.

Ingredients:

·      Opah

·      Zest of 1 lemon

·      ½ tsp lemon juice

·      1 tsp each of fresh parsley and thyme, roughly chopped

·      2 tsp olive oil

·      Pinch of Salt+Pepper

Directions:

·      In a bowl, combine lemon zest, parsley, thyme, olive oil, lemon juice, salt and pepper

·      Pour herbal mixture over opah and bake at 350F until fish flakes apart and juice runs clear, approximately 30 minutes

·      Serve with your favorite vegetable
